Mediterranean Roasted Sweet Pepper & Chickpea Salad

From Meals That Heal

This nutrient-packed salad has been in my collection for nearly 20 years after I discovered it in one of my favorite cookbooks, Meals That Heal. Instead of having one main ingredient, it features a delightful medley of beautiful and delicious components that work harmoniously together. That said, the roasted bell peppers add a unique touch that elevates the dish to a whole new level of excellence. Give it a try, and you’ll see what I mean!

Mediterranean Chickpea Salad

Yield: 1 Cup Serving: 8

Ingredients

Tip: Feel free to add more or less of any ingredients. We love to add extra cucumber, lemon, and bell peppers to our salad!

  • 4 cups cooked chickpeas

  • 4 Roma tomato chopped

  • 2 red bell pepper roasted & chopped

  • 4 Persian cucumber chopped

  • 1 red onion small, quartered & thinly sliced (or chopped if you like)

  • 4 tbsp parsley chopped

  • 4 cloves garlic minced

  • 6 tbsp lemon juice fresh

  • 2 tsp olive oil

  • 2 tsp flax-seed

  • 1⁄2 -1 tsp salt

Directions

Roast the red bell peppers at a low temperature until they are soft. I like mine to caramelize to bring out the sweetness and flavor.

In a large bowl, combine the chickpeas, tomatoes, peppers, onion, cucumber, parsley, garlic, lemon juice, olive oil, flaxseed oil, and salt.

Toss to coat well.

Let stand for a least 30 minutes to allow flavors to blend.

Serve and eat up!

Spicy Roasted Red Pepper Hummus

Who doesn’t love delicious hummus? This creamy and spicy hummus is packed with plant-based protein, fiber, and healthy fats, making it an ideal dip for vegetables, pita bread, or sandwiches.

Ingredients:

  • 2 roasted red sweet peppers, peeled

  • 1 can (15 oz) chickpeas, drained

  • ¼ cup tahini

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • 1 tbsp extra virgin olive oil

  • ½ tsp smoked paprika

  • ½ tsp salt

Directions:

  1. Blend everything – Add all ingredients to a food processor or blender. Blend until smooth.

  2. Adjust seasoning – Add more salt, lemon juice, or paprika to taste.

  3. Serve & enjoy – Drizzle with olive oil and serve with pita chips or fresh veggies.
